Aubergine and Chickpea Curry

Recently we talked about the potential fertility benefits of adopting a Flexitarian approach to nutrition. A large study run out of Harvard Medical School showed a lower intake of animal protein and higher consumption of plant protein is positively associated with fertility (“The Nurse’s Health Study”

We noted, one way to gain the potential benefits is simply reducing the red meat portion of a recipe and substituting it with nuts or beans etc and we provided two recipes to get you started.

Today's featured recipe is for those willing to forgo animal protein altogether. It is a wonderful Aubergine and chickpea curry recipe suggested by Andrea (many thanks). Most importantly, it received a big thumbs up from dinner guests last week.
